Abstract The present study was undertaken to assess the environmental sanitation ic public feeding places (restaurants) in Alexandria. A sample of 200 restaurants have been randomly chosen from the six icts of Alexandria city to study the physical characteristics of the restaurants I safety measures followed in processing, preparing and presenting food. Scoring of the 200 restaurants into poor, accepted, good and very good ids on the fulfillment of certain items related to the floor, ceiling, walls, lation, lighting and general look of the place. The study revealed that 73,5 % of the restaurants scored as accepted, % good and 8.5 % scored as very good while a minority (4.5 %) scored r. On the other hand 82.0 % of their kitchens scored accepted, 8.0 % as good 13.0 % as very good. The study revealed that the majority of restaurants had clean equipment %) made of aluminum (93.5 %), the rest ( 6.5 %) made of stainless steel. Hand washing facilities were present in only 45.5 % of restaurants. While facilities was provided in only 17.5 % of restaurants. The study showed that only 3 % of restaurants possesses first aid box, for icy first aid measures. It is recommended that first aid box should be accessible and should contain sufficient water proof dressings and burn rings. Again one staff trained in first aid should be available at each shift. |
