Abstract Pifty random samples of dressed chicken were co~leoted trom different shops in Zagazi& markets, 25 were frozen JJJld the rest were fresh .•. The study was planned to spot the sanitary condition of the ohicken~ The results of organoleptio examination proved that lO% of samples showed greyish white colour, 26% we~ yellowish white end 64% were light red,_ The greyish C.01our is indicative of starting deoomposition (Table 3),- While 10% showed unpl.easant odo\U”.~ The pin feathers in frozen ones waS alwayS better tha~ in non forzen (Table 5) .•. The baoterial oount of frozen chicken was found to be 8sno4 t ’93no4 t 13D.O 7 for the breast, thigh and inner oavity~ In the unforzen samples the count was 64XlO3, 1~~4 and 99Xl.O~ for the breast, the thigh and inner oavity sampleS respeotively (TableS 6,7 & 8)~ The surface bacterial oount of the breast ia lower than that Of thigh |
