Abstract

To reduce microbial contamination, and extend the sheiflife of broiler chicken carcasses, washing of chicken carcasses with different chemical decontaminator solution at edible concentration was applied.
The washed samples were evaluated bacteriologically and chemically at different storage temperatures and at the fresh state.
1 - The first treatment was by 1.2% Acetic acid solution and evaluated at:
1.1 -0 day with a highly significant reduction rate (between control and treated samples) (at P < 0.01) on the means of Aerobic plate count, Staphylococcus aureus count, Coliform and Psychrotrophic plate counts. While only a significant rate of reduction on the means of Pseudomonas and pH
1.2-At 6 days chilling: Also highly reduction rates on the means of Aerobic plate count, Staphylococcus aureus count, and only significant reduction rates on the means of Psychrotrophie plate count Pseudomonas counts pH and the total volatile nitrogen. No significant reduction rate on the other parameters. The odour of treated samples was acidic and vinegary.
1-3: At 12 days chilling: A highly significant reduction rates on the means of Aerobic plate count, Coliform, pH and T.V.N. While only significant reduction of the means of Staphylococcus aureus and Psychrotrophs.
1-4: At one month freezing: a highly significant reduction rates on the means of Aerobic plate count, Staphylococcus aureus count, pH and Acid values and significant reduction rates of the means of the other parameters.
1-5; At six months freezing: highly significant reduction rates on the means of Staphylococcus aureus, Psychrotrophic plate count and pH values. While significant reduction rates on the means of Aerobic plate count and
