Abstract Meat constitutes the principal food stuff for the human body. Although meat is essential for human being, yet, it is sometimes dangerous for consumers. So, the main role of meat hygiene is to supply good quality meat and meat products free from agents causing disease. The problem of viral infection in relation to meat hygiene has not been discussed before by different authorities, so systematic study has been conducted to regard the correlation between viral infection and meat quality in slaughtered animals. Therefore, this work was planned out to discuss the following points: 1. Post-mortem finding of experimentally infected cattle with Lumpy skin disease virus and sheep with Sheep pox disease virus. Postmortem finding were detected at different intervals after slaughtered (5, 15 and 25 days) of infected animals, it was found that the affected organs showing abnormal gross appearance were higher in the 5th day post infection than in the 15tL1 and 25th day post infection. Also, it was found that most organs were affected during the stage of vireamia. 2. Testing of bleeding for muscle samples was applied using acid malachite test and Reder’s test, the obtained results showed that the tested samples were ill bled, moderately bled and well bled after 5, 15 and 25 days post-infection, respectively. |
