Abstract

A total of one hundred samples of fish products such as salted sardine, fessekh, smoked fish (Ringa) and canned tuna (25 from each) were collected from different shops at Alexandria province. The samples were directly transferred to the laboratory under complete aseptic conditions with a minimum of delay where they were examined mycologically.
The results revealed that:
1- The total mould count of salted sardine, fessekh, smoked fish (Ringa) and canned tuna ranged from 0.8x102 to 1x103, 0.7x102 to 2x10’,
0.2x102 to 4x103 and lxlO2 to 8x104 with an average of
6.31x102±6.35x10, 5.9x102±I.15x102. 7.52x102±2.41xl02 and
6.95xl03±3.27x103 cfiu/g, respectively.
The difference between the mean values of mould counts in sardine, fessekh and ringa was not significant at p 0.05. While, the difference between the mean values of mould counts in tuna and each of sardine, fessekh and ringa was highly significant at p 0.05.
The total yeast count of salted sardine, fessekh, smoked fish (ringa) and canned tuna ranged from 0.3x102 to6xlO2,0.7xlO2to2xlO3, lxl02to 5.lxlO4 and 0.2xl02to3xl06withameanvaluesof2.36x102±3,37x10,

1.91x104±959x103, 623x103+2.77x103 and 1.60x105+1.21x105 cthlg respectively.
4- The difference between the mean values of yeast counts in salted sardine and each of fessekh, smoked fish (Ringa) and canned tuna was highly significant at p 0.05 level of significance, and there is no significant difference between the mean values of yeast count in fessekh, smoked fish (Ringa) and canned tuna at p 0.05.
5- Aspergillas flavus, Aspergillas niger, Aspergillusfamigatus, Macor species, Pen icil!iu m species, A Item aria, Cladosporu us, Fusarium, Rhizobus and Absidia were isolated:
(a) from salted sardine at an incidence of48, 24, 8,4,48, 16, 24, 16, 8 and 4% respectively.
(b) from fessekh at an incidence of 40, 8, 12,4, 28, 4, 8, 8, 4 and 16% respectively.
(c) from smoked fish (Ringa) at an incidence of32, 12, 32, 8, 44, 16, 48, 16, 8 and 4% respectively.
(d) from canned tuna at an incidence of32, 88, 12, 32, 56, 48, 12, 16, 8 and 4% respectively.
6- The incidence of Can dida krusei, C tropicalis, Cpseudotropicalis, Cgallartnondi, Calbicans, Cparapsillosis, Rhodotomulla and Geotrichuni
(a) In salted sardine were 24, 12, 36, 24, 12, 12, 8 and 4% respectively.
