Abstract The present work was carried out to study the concentration of cadmium, copper, chromium, lead am! zinc in different fish products. A total of 100 samples of fish products as canned sardine, canned tuna, smoked fish and salted fish (25 from each) were collected from different localities at Alexandria province. The samples were transferred to the laboratory where they were prepared for monitoring the heavy metal residues by wet acid digestion, then the heavy metal content of these samples were measured by the atomic absorption spectrophotometer. The results revealed that 1-. The copper concentrations in canned sardine canned tuna, smoked fish and salted fish were ranged from (3.61 to 12.52), (4.19 to 15.12), (4.23 to 11.32) and (5.48 to 15.48) i’g/g with an average of (7.68±0.48), (8.55±0.56), (7.16±0.41) and (10.39±0.52) [tg/g respectively. There is no significant difference between copper concentrations in canned sardine, canned tuna and smoked fish. On the other hand, there is a significant difference between copper concentrations in salted fish and each of canned sardine canned tuna, and smoked fish (p<O.05) 2- The lead concentration in canned sardine, canned tuna, smoked fish and salted fishwererangedfrom(l.12to3,ll),(1.12to3.22),(l.02to3.21) . and (1.24 to 3.59) with a mean values of (1.96±011), (1.97±0.14), (1.68±0.12) and (2.31±0.14) g/g respectively There is no significant difference between lead concentrations in canned sardine, canned tuna and salted fish. Also there is no significant difference between lead concentrations in canned sardine, canned tuna and smoked fish. But the difference between lead concentrations in smoked fish and salted fish is highly significant (p<O.O5) 3- The cadmium concentrations in canned sardine, canned tuna, smoked fish and salted fish were ranged from (0.21 to 0.93), (0.21 to 0.95), (0.23 to 0.58) and (0.28 to 0.43) with an average of (0.42±0.04), (0.49±0.05), (0.34±0.02) and (0.53±0.05) jig!g respectively There is no significant difference between cadmium concentrations in canned sardine, canned tuna and salted fish, also, there is no significant difference between cadmium concentrations in canned sardine and smoked fish while, the difference between both (canned tuna and salted fish) and smoked fish is highly significant 4- The concentrations of zinc in canned sardine, canned tuna, smoked fish and salted fish were ranged from (10.33 to 39.22), (12.8 to 33.21), (10.51 to 26.31) and (9.35 to 29.33) withanaverage of(23.53±l.64), (23.10±1.17), (16.47±0.84) and (18.29±1.10) jig/g respectively. |
