Abstract

Milk is a very rich food with high nutritional value. It contains lots of excellent nutrients, some of which are so rare that cannot be found anywhere else in nature. So, it is not by chance that milk
consists the newborn’s first and unique food. The main objective of this work was to measure the role of season on vitamin A, D, E and K composition in cows and buffaloes. For this purpose, one hundred milliliters was collected from 80 milk samples, at Ismailia Govemorate farms 40 samples from cattle and other 40 form buffaloesin two studied seasons (winter and summer). Samples were divided into three portions. Milk samples were heat-treated by pasteurization and boiling then samples analyzed for fat soluble vitamins (A, D, E and K) content using High Performance Liquid Chromatography (HPLC). Separation and determination of vitamins were conducted in this
study by chromatographic separation, which was run isocratically, keeping the volumetric flow the same throughout the run using HPLC
on the analytical column. Our results indicated that, the vitamin A content in row cow and buffaloes milk in summer and winter were 53.0, 51.4, 57.54 and55.54 1lg/100 ml, respectively. While, vitamin D were 0.032, 0.031,
