Abstract

The present study was conducted to determine the residual amounts of heavy metals and trace elements (lead, cadmium, aluminum, iron, manganese, selenium and iron) in (20) raw, (26) sterilized milk, (20) milk powder, (9) condensed and (12) infant milk samples were collected from different markets in Zagazig City, Sharkia goverorate during the period from October 2002 to July 2003. Moreover study the effect of storage on the distribution of heavy metal in milk and some milk products. All samples were digested and analyzed by Atomic Absorption Spectrophotometry.
I-Heavy metals in milk and milk products:
from the results found that the mean value of Pb higher in sterilized milk than in raw milk and milk powder, the mean value of Cd was higher in raw milk than in sterilized milk and milk powder while the mean values of AL in sterilized milk and milk powder higher than in raw milk, but for iron the mean value in milk powder was higher than in raw and sterilized milk. For Mn the mean value in sterilized milk lower than in raw milk and milk powder. However, Se the mean value of Se in raw milk and other products were equal.
II- Study the effect of storage period on the distribution of heavy metals in milk and milk samples:
1- Heavy metals concentration in examined sterilized milk samples during storage period (210 days).
from the previous results there were significant change in the level of Cd from 0 day to 210 days and in the level of tin from 0 day to 60 days and 0 day and 210 days.
2- Heavy metals concentration in examined condensed milk samples during storage periods (210 days):
There were significance change in the level of Cd at 0 day to 60 days and from 0 day to 210 days and there were significance change (P<0.05) in the level of AL in condensed milk samples from 0 day till 210 days.
3- Heavy metals concentration in examined infant milk formulae samples during storage period (210 days):
Average concentration of Cd, Sn, AL and Pb in infant milk samples during storage period (0-60-210 days) were 0.21, 0.30, 0.31, 1.56, 1.63, 1.71, 1.25, 1.50, 2.16, 0.45, 0.56, 0.80 ppm. The results declared that there were significance change (P<0.05) and highly significance (P<0.001) change in the levels of AL and Pb in infant milk formulae samples during storage period.
