Abstract

The objectives of this study was to formulate new foods which are high in iron (Fe) and /or zinc (zn) using natural ingredients to correct deficiencies of both elements in children. Ingredients of foods were selected to be high in Fe and / or zn contain nutrients known to enhances the absorption like vit.c (for Fe) and also some herbs and plants proved to contain high concentration of mentioned elements as the marine algae. Newly formulated (high Fe and/ or zn) were:
a)- canned variety meat and canned chicken liver with marine algae and canned oyster:
1-canned chicken liver with marine algae.
2-canned cattle “cow” liver with marine algae.
3-canned sheep with marine algae.
4-canned sheep, oxplus chicken hearts.
5-canned sheep & ox kidneys.
1-canned oyster.
b) Baked products:
1-biscuit, with cattle spleen powder.
2-chickpea biscuit “with chickpea, cocoa powder, almond, ginger.
3-cane syrup biscuits with cocoa powder and skin milk.
c-some prepared foods with nuts.
1-roasted sesame with cane syrup.
2-roasted peanut with cane syrup.
3-roasted seeds with cane syrup “with roasted sun flower seeds, water melon seed and pumpkin seeds”.
4-basbusa with cane syrup “with yogurt, roasted almond & roasted hazelnut.
5-banana – milk – cane syrup blend “with whole milk, cocoa powder and roasted nuts like almond, hazelnut or pistachio”.
6-cane syrup – tahina paste
d) culinary dishes with marine algae powder and spices:
1-lentil with marine algae powder and tomato juice.
2-soybeans with marine algae powder.
Proximate composition & Fe and zn contents were determined in above foods which were organs leptically evaluated five of newly formulated foods selected and evaluated via Feeding experiments using sprague Dawly strain of albino rats. Control negative (-) rats received basal (control diet) all the time, while two groups, one (control positive 1 control +1) was Fed on Fe deficient diet for 2 weeks, the other on zn deficient diet for 2 weeks “control +2” ther these control + groups were distributed among diets containing one of the 5 selected foods till the end of experiments. Selected foods for Feeding of Fe deficient rats “ control +” were
1-basabusa with cane syrup.
2-canned chicken liver with powdered marine algae
3-canned soybean with marine algae, while for Feeding of zn deficient rats” control +2”
1-basbusa with cane syrup.
2-cooked lentil with powdered marine algae .
3-chickpea biscuits. At the end of biological experiments rats were weighted, sacrificed and serum analysis carried out.
