Abstract Seeds of four legume samples, namely two varieties of white kidney beans (phaseolus Vulgaris), neprasky and pronky, cowpea (vigna unguiculata) variety Dokki 331 and Peas (pisum sativum) variety Master B were used in this work. The data for chemical analysis showed that seeds of two kidney bean samples were characterized with higher protein content (29.6 % and 28.4 %) than those recorded in cowpea (24.3%) and peas (24.7%) and the same is true for the total ash contents. Cowpea sample contained higher level of lipids than those detected in other samples |
