Abstract
Sorghum (sorghum bicolor (L.) Moench) is the fifth leading crop in the total world production behind rice, wheat, corn, and barly. About 50 years ago and until the introduction of maize, it was the only cereal grain in Africa and Asia.
The main objectives of this study are , to compare two different varieties using biochemical methods available, and to get some information about the biological value of the grains of two sorghum varieties namely Giza 15 and CGS 1007
