Abstract Targeted assessment of this letter of biological and chemical contaminants that may reside on the mushrooms (mushrooms), so being a perishable food and corruption, a favorable environment for the growth of microbiology because of its chemical structure, which includes a very high percentage of moisture up to about 90% and therefore the validity of this the food product does not exceed 6 days in the best conditions of production and circulation as a primary raw material.
