Abstract
Because of the increasing scarcity of calf rennet, any attempt for partial or complete substitute of calf rennet with other proteinases, would be economically favourable and obviate the dependence on calf rennet. Experiments described in this Thesis investigated, extraction, purification, characterization, suitability of rabbit pepsin as rennet substitute and the characteristics of Domiati cheese made with such coagulant.
