Abstract To evaluate the variation of aroma volatiles with cultivar, an extensive survey of mango and guava was undertaken, inculuding four mango varieties ( Alphonso,Hindi,Zebda,And Tamiour)And tow Guava Cultivars( White and Pink fleshed) which are grown in Egypt. The Usueful widely technique used in the analysis of a volatile oil is to separate this oil into nonpolar compounds ( mostly hydrocsrbons) and polar fraction( mostly oxygenated compounds). the compounds containing oxygen or other polar groups are generally mor important contributed to aroma than hydrocarbons. |
