Abstract

The antifungal activity of 25 lactic acid bacterial strains has been investigated and the investigation demonstrated the antifungal activity of 13 lactic acid bacterial strains. Lactobacillus rhamnosus 3M has been selected from these 13 active strains for more further investigation, because research on the antifungal activity of Lactobacillus rhamnosus was rare. Testing of the antifungal activity using dual culture agar plate assay method demonstrate the antifungal activity of Lactobacillus rhamnosus and Penicillum camembertii. No inhibitory activity could be detected against the molds Aspergillus chevalieri, Aspergillus flavus, Aspergillus fumigatus, Aspergillus niger, Penicillium corylophilum or the yeast Candida albicans. After isolation of the antifungal metabolites, testing of heat treatment and protienase K demonstrated the proteinaceous and heat stable nature of the metabolites. The demonstrated the prroteinaceous and heat stable nature of the metabolites. The antifungal metabolites were subjected to purification using column packed with Sephadex G-25. The active fraction was subjected for chromatography using SDS-PAGE demonstrated two proteins with molecular weight of 17 and 16 kDa were detected. MIC value against Fusarium oxysporum, Fusarium moniliform and Penicillium camembertii was 5μl/ml. And The effect of heat on the antifungal activity at 15, 20, 25, 30 and 35oC and heat stability at 50 and 60oC were examined.
