Abstract

This study was carried out to evaluate the microbiological quality of table eggs in Beni-Suef city,275 eggs representing 55 groups(samples) of Baladi hens eggs (21 samples)and poultry farm eggs(34 samples) were collected randomly from poultry farms,markets,grocerers and supermarkets in Beni-suef city .The microbiological examination were for shells,contents of Baladi hens eggs and Poultry farm eggs respectively .The Aerobic plate counts were 1.46×〖10〗^4 ±4.7×103 , 8×〖10〗^3 ± 3.8×103 , 5.3×〖10〗^3 ±2×103 , 1.1×〖10〗^3 ± 3×102 cfu / shell or ml respectively. The coliform counts were of 4.5×〖10〗^2 ± 2.4× 103, 2×10 ±0.8 , 1.7×〖10〗^2 ± 8.1×10, 1.5×〖10〗^2 ± 8.4× 10 cfu/shell or ml respectively. The Fecal coliform counts were 8×〖10〗^2 ± 7.13 ×102, 0.95 ± 0.36 , 6.2×10 ±2.5×10 , 9.8×10 ± 6.1×10 cfu/shell or ml respectively.The E.coli counts were 9.4×10 ± 7.1×10 , 0.5± 0.23 , 1.74×10 ±9.88 , 1.1×10 ±6.68 cfu/shell or ml respectively.The Total yeasts and molds counts were3.7×〖10〗^3 ± 1.2×103, 5.9×〖10〗^2±2.5×102 , 2×〖10〗^3 ± 1.1×102, 2.6×〖10〗^2 ± 1.7×102 cfu / shell or ml respectively.The isolation of Salmonella spp.were 57.1% ,5.88%, 52.38% and 11.76% respectively.The isolation of Pseudomonas was 7.2×〖10〗^2 ±4.6×102, 4.5×〖10〗^2 ± 3.2× 102 cfu/shell or ml .
