Abstract
The estimation of the chemical variation between two varieties of the sycamore fruits namely roumy and balady. the sutable processes and technnnnnological methods to utilize this fruit in preparing new products were studied. The storage stability and the utilization of the new sycamore products in bakery fild were also undertaken.
