Abstract

A total of 120 samples of dried products were collected randomly from supermarkets and groceries. Milk powder 70, dried casein 30, and dried whey 20 samples. The samples were still valid for consumption with apparently normal appearance. The samples were evaluated for compositional and microbiological quality.
Moisture content:
The mean values of the examined milk powder, dried caein and dried whey samples for moisture content were 6.51 ± 0.27, 8.53 + 0.31 and 7.50 ± 0.47, respectively.
Acidity percentage:
Acidity percentage of the examined samples of dried milk powder, dried casein and dried whey were 0.185 ± 0.003, 0.166 ± 0.004 and 0.203 ± 0.005, respectively.
Microbiological quality:
• Total colony count: The mean value of the total colony count of the examined samples of milk powder, dried casein and dried whey were 3.57 x io ± 5.76 x io3, 2.07 x io4 ± 5.93 x io3 and 1.44 x l0 ± 4.48 x io3, respectively.
• Total coliform count: The mean values of the total coliform count of the examined samples of milk powder, dried casein and dried whey were 1.53 x io ± 4.89 x 102, 3.35 x 102 ± 1.16 x 102 and 1.66 x 102 ± 5.2 x 10, respectively.
• The most prevalent coliform species isolated from milk powder, dried casein and dried whey samples were Citrobacter freundit (7.1, 13.3, 0%); Enterobacter aerogenes (10, 10, 25%); Enterobacter agglomerans (4.2, 0, 0%); Enterobacter gergaviae (5.7, 0, 0%); Enterobacter cloacae (0, 16.5, 0%); Edwardsiella hoshinii (7.1, 0, 30%); E. colt (11.4, 0, 0%), Kiebsiella ozaenae (4.2, 20, 20%) and Kiebsiella pneunwniae (5.7, 10, 0%).
• Enterococcusfaecirnn count: The total Enterococcusfaecium count mean values in the examined samples of milk powder, dried casein and dried whey were 1.32 x 102 ± 2.68 x 102, 2.88 x 10 ± 1.04 x 10 and 1.67 x 10 ± 3,33, respectively.
• Enterococcusfaecalis count: The mean values of Enterococcusfaecctlis count in the examined samples of milk powder, dried easein and dried whey were 7.72 x 10 ± 1.31 x 10,4.24x 10 ± 1.15x lOand2.50x 10 ± 5.63 respectively.
