Abstract

The objective of this research was to evaluated special food menus for patients which offered in some hotels and resorts as well as in some hospitals, according to Islamic legislation, to access balanced and appropriated menus for the different cases of illness through the food and beverages mentioned in Sunnah of the Prophet Muhammad (blessings of Allah be upon him) and Qur’an in order to achieved guest satisfaction, and to contributed in the refreshment of therapeutic tourism. The research was conducted at some hospitals, as well as the different resorts and hotels. The nutritional values of hospitals meals were calculated according to the values of program ”USDA National Nutrients Database for Windows, Standard Reference Release SR 23” and FAO Food Composition Table for Use in Africa.
The menus were analyzed for hospitals to the lack of special types of food offered in hotels and they are not specific to a particular disease, as well as the lists of hospitals covering most of the diseases related to nutrition.
Research tools of this study consisted of the following:
1- Questionnaire is designed to food and beverage managers to provided full detailed information about special menus. This questionnaire was distributed in English and Arabic language.
2 - Analysis of hospitals meals in terms of the nutrients composition.
During the review of theoretical and field study was possible to derive the following results:
1- The hotels and resorts put special food menus into consideration when planning the menu and usually based on both the Executive chef and Food and Beverages managers, diet therapy was the most special food menus request; also found that a lot of nationalities require special food menus.
2 - For the analysis of hospitals meals, it was found that there were some defaults in these meals, either an increase of some elements or lack of others. The study suggested menus for each disease and has been addressed this deficiency through different food items in the Qur’an and Sunnah of the Prophet Muhammad (peace be upon him).
Based on the literature reviewed and the data gathered from the field study, the recommendations of this research could be the following:
-The hotels should make restaurant which offer varieties of special meals such as diet therapy, athletic meal, vegetarian, and Elders’ meals to achieve the guests’ satisfaction from different nationalities.
Dietitian or hotel doctor should share the responsible of menu planning in hotels with executive chefs and food and beverage managers.
-The recommended meals should be sent to the ministry of health and population to talk the agreement to use it in hospitals and hotels.
-This study focused only on the evaluation of special food menus according to the Islamic legislation. The future research should be in evaluation of food menus according to Islamic legislation and Continue to search for other benefits of foods and beverages used in this study and try to discover other types which are useful in the treatment of diseases.
-It is possible for hotels and hospitals that use menus planned by the researcher in this study according to the circumstances of each disease and tried to fade from which errors in the lists submitted by hospitals under study, through the use of foods in the Islamic legislation (Qur’an and Sunnah).
