Abstract One hundred and fifty samples of UHT milk, yogurt, soft, hard & processed cheese (thirty samples of each) were analyzed to investigate the presence of some hazards. The samples were subjected to organolyptic, chemical and microbiological examinations. Organolyptic examination revealed that the majority of yogurt samples were judged as good in the contrary, the majority of soft, hard, processed cheese and UHT milk samples were judged as fair. Chemical analysis indicated that tetracyclines were present in samples of UHT milk with variable percentages, while aflatoxin M1 was detected in all examined samples of UHT milk and cheese.Sorbic acid, benzoic acid, sulphur dioxide and nitrite could be detected in some samples of cheese. Microbiological examination of the collected samples revealed that coliforms, S. aureus, spore formers, Enterobcteriacae,yeast and mold were present in variable counts, while both Yersinia enterocoliticaand B. cereus could not be detected in any of the examined samples. |
