Abstract The date palm is one of the oldest fruit trees in the Arabian Peninsula and has played an important role in the day to day life of the people of this region for the last 7000 years. In Egypt date palm is one of the major fruit trees. Besides the direct consumption of the fruit, dates are utilized locally in many ways, including the production of date extract ( dibis ), the most common date product. Dibis (date syrup) is a good source of many important elements such as K, Na, Ca, Mg, Fe and Zn. Amino acid composition showed the presence of 15 Amino acids with glutamic acid, Phenylanine and Prolin as the predominant ones, while the total amino acids amounted to 77b and 547 mg/ 100g, glucose, fructose in addition to sugar, macro and micro elements which may play important role of considering the date syrup as a rich nourishment. |
