Abstract One hundred sample of processed cheese samples (50 of each locally manufactured processed and imported processed cheeses) were collected randomly from different localities in Zagazig city, Sharkia Govemorate, Egypt. The collected samples were transferred directly to the laboratory with a minimum of delay to be examined. microbiologically A survey was conducted to investigate the following topics: * Total colony count. * Enumeration and identification of staphylococci. * Enumeration and identification of coliforms. Enumeration and identification of enterococci. Detection of anaerobes Total yeast count Total mould count. Economic and public health importance of isolated rmcroorgarusms. The minimum total colony count of examined locally manufactured processed cheese samples was 27X102, the maximum was 57X106 with average of 13.11X106/g. while in those of imported processed cheeses ones were ranged from nxio’ to 46X106with an average of 46.21XI04• |
