Abstract Using of antibacterial effected in the animal farms without control, this using not only for protection or treatment but also to increase the growth rate to get much money by illegal ways. Recent studies proved that these residues have many hazards if consumed by man now public health authorities in different countries have established different regulation for veterinary use of the drugs in food of animal origin. Therefore, this study was carried out to investigate the presence of antibacterial residues in beef meat and meat products using microbiological inhibitory assay and effect these residues on microbial quality of meat and meat products using microbiological examination. PART 1: Detection of antibacterial residues in samples of meat and meat products: 80 samples representing (20 samples each of fresh meat, minced meat, beef burger and fresh sausage) were collected from different shops at Sharkia govemorate for detection of antibacterial residues using microbial inhibition test. The results revealed that 6 samples of meat and meat products were positive for antibacterial residues with a percentage of 7.5%. The prevalence of residues was obtained in sausage samples, (6) 30%, which non of antibacterial residues were detected in meat samples, burger samples and minced meat samples. |
