Abstract

in recent years, biotechnological researches done on the production of EPSs by LAB were widely spread and they also varied monitoring ways to purify, increase quantity of and chemically identify the EPSs.moreover, some other researches focused on the application of the EPSs production LAB strains for the manufacture of some dairy products and studing the rheological properties of resultant products.
