The study aimed at recognizing the current position of milk production and consumption in addition to the factors affecting the production and consumption capacity related to dairy products as well as the factors affecting the consumer price of milk to know the causes of the milk gap the reduction of the individual’s average share of it, knowing the extent of changes caused to the structure of milk and its products within the recent years, specifying the problems connected with this important industry which hinder its development and setting a realistic vision for solving these problems in this essential sector because the food and economic importance of milk and its products . Methods & Results : the study depended on a set of secondary data whether published or not from Economic Affairs Sector of Ministry of Agriculture and lands Reclamation, Central Agency for Public Mobilization and Statistics, chamber of commerce and Union of Egyptian Industries as well as the primary data of sample study in Dakahlia Governorate in relation to the enterprises that processed milk products. Moreover, the study used the qualitative and quantative statistic and economic analysis and some aggregate indicators of evaluating performance to reflect the efficiency of performance, the technical efficiency and the scale efficiency of dairy manufacturing enterprises and their dairy products in the research sample with Data Envelopment Analysis(DEA) for achieving the aim of the study and the nature of data available in this area . It is clear that there are problems and hurdles facing the dairy and its products in Egypt : The low production and low productivity of the animal wealth in Egypt , Not paying attention to the sound nutrition of the animal , Circulating the dairy product in a wrong and unhealthy was that causes diseases and the invalidity of the product for industry of high quality standards , The industry’s lack of planning and the nonexploitation of productive capacities that are available for whether the animal wealth projects or product manufacturing enterprises , Exit by the public sector institutions and the supporting governmental role out of dairy and its products Conclusion : For correcting the course of this important and vital industry, we suggest what follows : -Expansion of the big farms of specialized production. -Establishing the centers for collecting the crude milk to make it available in a healthy way whether to be sold as liquid milk or milk prepared for manufacture. -Activating the role of the monitoring bodies of the state in counting and controlling the quality of dairy manufacturing enterprises in a continuous and firm way. -The support by the government to this industry as well as making developmental agricultural policies as for borrowing – exporting and importing in order to have an internal and external trading balance in addition to giving the opportunity for developing this important industry.
