Abstract During the present study, 100 samples of processed meat products collected from different supermarkets and groceries in Assiut City were mycologically analyzed. Investigations were also extended to detect mycotoxins in these products as well as the toxins and enzymes produced by the isolated fungi. The effect of clove oil and garlic and on minced garlicon several isolates of mycobiota was also tested. The maint results can be summarized in the following points: 1- A total of 101 species belonging to 37 genera of molds (29 genera and 83 species) and yeasts (8 genera and 18 species) were identified. |
