Abstract

A total of 75 samples of fish fillets of tilapia nilotica, Catfish and
Bagrus bayad (25 feach) were collected randomly from different super
markets for bacteriological and mycological evaluation.
Bacteriological examination revealed that the mean values of total
bacterial palate count, total psychrotrophic count, total
Enterobacteriaceae count, total staphylococci count were 2.94 x 106 +
2.67 x 10scfu/g, 1.35 x 105 + 1.15 X 104cfu/g, 1.87 x 105 + 2.38 X 104
cfu/g, 1.98 x 105 + 3.5 x 104/g and 8 x 103 + 2 X 103 cfu/g. for Tilopia
nilatica fillets, 3.48 x 106 + 5.51 x 105 cfu/g, 2.4 x 105 + 2.95 X 104 cfu/g,
2.32 x 105+2.3 x 104 cfu/g, 8.58 x 104+ 9.7 X 103 cfu/g and 1 x 104+
2.04 x 103/g for Catfish fillets and 2.1 x 106 + 4.03 X 105, 1.58 X
105+1.67 XI04, 1.35 x 105+1.15 x 104, 1.08 x 105 +2.22 X 104 and 6.6 x
103 + 1.96 x 103/g. for Bagras bayad fillets, respectively.
The incidence of Salmonella spp isolated from fish fillets samples
was 4%, 16% and 0 for Tilapia nilotica, Catfish and Bagrus bayad,
respectively.
On the other hand, m,cological examination revealed that the
mean values of total mould count were 3 x 103 + 1.53 x 1~ , 3 x io’ +
6.32 x 1~ cfu/g and 2 x loJ ±2.58 x 102 cfulg for Tilapia nilotica,
Catfish and Bagrus bayad, Jlly-ctively. While, the mean values of total
yeast count were 2 xloJ + S.77 x 102 cfu/g, 4 x 103 + 9.13 x 1~ cfu/g and
3.4 x io’ + 1.17 x 1~ cfulg. tOr Tilapia nilotica, Catfish and Bagrus
bayad, respectively.

The mould and the yeast isolated from examined samples of
Tilapia nilotica were Aspergillas niger (32%), Mucor spp (24%),
Cladosporium spp (16%), candida spp (36%), ToruJopsin (8%) and
RhodotoruJa (12%), Catfish were (64%), (32%), (12%), (44%), (16%)
and (24%) and Bagrus bayed were (20%), (12%), (0%), (0%), (8%) and
(0%), respectively.
