Abstract One hundred and fifty Anchovies samples 50 each of ( from large tin, from glassed bottles and canned Anchovies) were collected from different localities at zagazig markets. The collected samples were transferred under aseptic condition to the laboratory and were subjected to the bacteriological examination to detect its sanitary condition . The mean count of Bacillus cereus in examined canned Anchovies was 1.3 x 102 /gram. Salmonella, E. Coli„ Clostridium bolulinum Cl. perfringens and Vibrio parahaemolyticus Kanagawa positive failed to be detected in any samples during this investigation. Proteus vulagris, Proteus morganii, Proteus mirabilis, Proteus rettergi, Klebsiella aerogenes Citrobacter freundii and Enterobacter aero genes could be isolated from examined samples of Anchovies in large tins and glassed bottles with a varying percentages. Cl. bifermintans, Cl. sordelli, Cl. sporogenes and Cl. histolyticum could be isolated from examined different types of Anchovies with a varying percentages. Public health importance as well as the suggestive methods for prevention and control were discussed. |
