Abstract
This research shows methods of extracting natural pigments for the type of green algae (Ulva lactuca) & red algae (Plocamium cartilegineum & Gelidium sp), natural pigments alternative to industrial. This study showed that pigments which extracted from green algae her best solvent (Acetone 80%) at a wavelength (450nm ) with an average (0.609nm), followed by (N,N-dimethylformamide 100% + N -196), when the wavelength (450nm), average (0.631nm) and algae in the form of dried. Wavelength indicates the presence of (Total-chlorophyll, chlorophyll A, chlorophyll ß). the other side red algae best solvent water to get the red pigment, but to get the green from red algae score the best solvent (N,N-dimethylformamide) at wavelength (450nm) average (1.335nm), followed by (methanol+ammonium acetate) at the same wavelength with an average (0.988nm). Indicates of (beta carotene) and other types of Carotenoids. The algae are processed before preparing for the extraction of the pigment (soak and grinding for the cells). Drying process of the best green and the freezing is the best pigment extracting from the algae. Production and algae powder use for pigment for coloring jelly of pomegranate and kiwi fruit. To assessment of the sensory properties. Evaluation jelly green better than jelly red in color and flavor. It is a treasure of natural pigments and carotenes, vitamins and dietary fiber that will affect positively on the overall health of individuals helps clearly to treat (obesity, diabetes, osteoporosis, & cancer increase immunity).Found gradients of colors green olive and yellow.
