Abstract

Microorganisms synthesize a wide range of surface active compounds, generally called biosurfactants. Biosurfactants are a group of structurally diverse molecules produced by different microorganisms and are mainly classified according to their chemical structure and their microbial origin. The low molecular weight biosurfactants reduce the surface tension at air/water interfaces and the interfacial tension at oil/water interfaces, whereas the high molecular weight biosurfactants, also called bioemulsefiers are more effective in stabilizing oil in water emulsions .Biosurfactants are attracting much interest, due to their potential advantages over their synthetic counterparts in many fields spanning environmental, food, biomedical, and other industrial application.
