Abstract

Dietary factors play a key role in the development of various human diseases, including cardiovascular and other metabolic diseases, atherosclerosis, hyperlipidemia thrombosis, hypertension and diabetes The research aims to the following: 1. The study of the chemical structure and the physical characteristics for cows’ and buffalo’s colostrum. 2. Knowing the extent of the effect of raw cows’ and buffaloes’ colostrum or heat treated upon diabetics the type2. 3. Knowing the extent of the effect het-treated on protective effect of cows’ and buffaloes’ colostrum for diabetic Patients. 4. This experiment was designed for studying the chemical structure of cows’ and buffaloes’ colostrum, knowing the heat stability, viscosity, acidity and PH. for them. Also, studying the effect of cows’ and buffaloes’ colostrum upon diabetic Patients. The number of male rats was 30, weight 177±20 g, they were divided into six groups, one of them was normal control (-ve) .Twenty five rats were injected with streptozotocien(55mg / kg b.w) dissolved in normal saline . One group of diabetic groups was control (+ve). Four groups consumed raw or heat-treated upon (79°) cows’ and buffaloes’ colostrum, (6ml/k b.w) twice daily. for 28 day. The results were :The total Protein concentration and whey proteins were found higher in cows’ colostrum than in buffalo colostrum while concentrations of total solids, fats, lactose, and ash in buffalo colostrum were higher than the cow colostrum.The results showed that consumed raw or heated cow’s and buffalo’s colostrum an obvious decrease in blood glucose, total cholesterol, triglycerides; increase in (HDL)it also showed an obvious improvement in kidney and liver functions for both groups.The histopathological results showed an obvious and great improvement in inflammation in kidney, liver; and pancreas in diabetics group. from this study, it is concluded that, consumption of raw cows’ or buffaloes’ can lower blood glucose, total cholesterol, triglycerides, (LDLc), (VLDLc); increase in (HDLc) than consumption heat-treated cows’ or buffaloes’.
