Abstract

The study was peoposed to investigate the possobillity of utilization of bissaria fish (atherina hespsetus). The bissaria fish is a small freshwater species. Therefore the main object of this work were to add fresh bissaria and dried bissaria (either by oven - air or microwave) to pizza product with different percentage to increase the nutritive value of pizza and using it as flavoring agent. The bissaria fish werw purchased from Edko city and the heads were removed, the fish was washed again in to remove blood and the intestinal waste from the fish.
