Abstract

Eighty random samples from shrimp and crab were collected from Damietta and Suez coasts (40 of each) (each group consists of (20) samples of moderate size in crab group consists of (10) females and (10) males). The samples were collected in polyethylene bags, all of which were kept in icebox and transferred immediately to the Meat Hygiene laboratory, Faculty of Veterinary Medicine, Zagazig University. The samples were then analyzed to estimate the level of Pb, Hg, As, and Cd by Atomic Absorption Spectrophotometer (AAS).
(1) Lead (Pb):
The mean values of lead concentration in examined shrimp samples from Suez and Damietta cities were 1.22±0.24 and 1.29±0.21 (ppm) wet weight, respectively, and lead residual levels in examined male Crab samples from Suez and Damietta were 1.33±0.18 and 1.15±0.26 ppm wet weight, respectively, while in examined female crab samples from Suez and Damietta areas were 1.71±0.36 and 1.41±0.22 ppm wet weight, respectively. There was no significant difference (P< 0.05) between the mean values of lead in examined shrimp and crab samples.
Most of the examined shrimp and crab samples exceeded the permissible limit of lead 0.5 ppm recommended by EOSQC (2007).
