Abstract Polluting water of fish ecosystem is a great problem, where the concentration of pollution is augmented in fish flesh. Therefore, great attention was paid from researchers to depress fish pollution via technological process. This work was performed to study the effect of acid treatment and cooking process on the physical and chemical properties of two types of farmed fish namely Tilapia and Mullet. Thus, fish were supplied from polluted private fish farm located in Elhammoul, kafr El sheik governorate, Egypt in the year 2013. Physical properties and chemical analysis including Cd and Pb content of both water and fish flesh were estimated. |
