Abstract Eighty samples of farmed freshwater fish (Tilapia nilotica and Clariasgariepinus) were collected (40 of each) from Assiut city. Transfer them into the laboratory. The samples were analyzed chemically for moisture, protein, fat, ash, carbohydrates, energy and cholesterol. It is evident that the mean values of moisture % in T. nilotica and C.gariepinus were 78.74 ± 0.18 and 77.07 ± 0.32, respectively. The mean values of protein % in T.nilotica and C.gariepinus were 83.75 ± 0.44 and 74.12 ± 0.81, respectively. The mean values of fat % in T. nilotica and C.gariepinus were 7.57 ± 0.26 and 16.20 ± 0.70, respectively. The mean values of ash % in T. nilotica and C. gariepinus were 7.27 ± 0.22 and 8.09 ± 0.25, respectively. It is evident that the mean values of carbohydrates % in T. nilotica and C.gariepinus were 1.42 ± 0.14 and 1.62 ± 0.15, respectively. The mean values of energy value (kcal / 100g) in T. nilotica and C.gariepinuswere 408.66 ± 1.43 and 448.48 ± 3.44, respectively. The mean values of cholesterol (mg/100gm) in T. nilotica and C.gariepinus were 36.51 ± 0.99 and 50.95 ± 1.33, respectively. |
