Abstract

The growing interest in utilization of natural antioxidants from inexpensive or residual sources from agricultural industries hold a great promise for future trends in human nutrition because they have many healthy effects on the consumer, which will keep them healthy and prevent diseases such as heart diseases and cancer. According to many biological studies, plant foods residues content of phytochemicals, phenolic compounds and flavonoids. So, the aim of the study is to prepare and evaluate a enrichment food product with different sources of natural antioxidants may have benefits due to health implications. In addition the safe utilization of by-products namely tomato peels, balady bosora and mandarin peels through evaluation their antioxidants activity. Also, their prophylactic effect for lipid profile and glucose level in experimental animals
