Abstract

The present study was carried out to determine the nutritive value and public health of native pigeon. A total of 100 pigeon (squab) samples were randomly collected from Assiut city, where the samples were transferred to the laboratory under refrigerated condition in an ice tank where they left in the refrigerator for 24 hrs, then prepared for chemical analysis. The samples were divided into three groups:
• 1st group (25 samples) contained pigeon meat samples without skin and bone (the flesh was completely separated from skin and bones)
• 2nd group (25 samples) contained pigeon meat samples with skin and without bone (the flesh with skin was completely separated from the bones).
• 3rd group (50 samples) contained pigeon meat samples with skin and bone.
All samples were subjected to a proximate analysis to determine the percentage of moisture, protein, fat, ash and carbohydrate, cholesterol, calcium and phosphorus contents as well as calculation of energy values and percentage of calories from fat.
(Pigeon meat samples without skin and bone, pigeon meat samples with skin and without bone and in pigeon meat samples with skin and bone).
The obtained results in the three groups of pigeon samples were as follows:
1- The mean value of moisture content was 72.49 ± 1.17 %, 62.42± 1.47 % and 61.83± 1.42 %, respectively.
2- The mean value of protein was 16.64± 0.78 %, 16.61± 0.92 % and 15.22± 0.89 %, respectively.
3- Concerning fat content, the mean value was 9.54± 1.01 %, 19.75± 1.87 %, and 20.3± 1.28%, respectively.
4- The mean value of ash content was 1.2± 0.21 %, 1.1± 0.12 % and 2.56± 0.29 %, respectively.
5- With reference to carbohydrate contents, the mean value was 0.13± 0.04 %, 0.12± 0.02% and 0.1± 0.05%, respectively.
6- The calculated mean energy value was 152.94± 9.06 kcal/ 100g, 244.69± 14.78 kcal/ 100g and 243.93± 11.59 kcal/ 100g, respectively.
7- The calculated of percentage of calories from protein was 43.51 %, 27.15 % and 24.95 %, respectively, percentage of calories from fat was 56.15 %, 72.65 % and 74.89 %, respectively, percentage of calories from carbohydrate was 0.34 %, 0.20 % and 0.16 %, respectively.
8- The mean value of calcium was 8.43 ± 2.12 %, 9.69± 2.2 %, and 26.59± 2.2 % respectively.
9-The mean value of phosphorus was 262.06± 33.68 %, 212.17±32.27 % and 387.35±70.46 %, respectively.
10-The mean value of cholesterol content was 38.54±10.09 %, 44.37± 5.99 %, and 47.71± 8.42 %, respectively.
