Abstract

A sum of 105 random samples of frozen beef sausage, collected from different localities (Benha city, centers and villages with 35 for each locality) at Kaliobia province, to evaluate the bacterial quality and the hygienic health hazard of some foodborne pathogens.
The bacteriological examination of frozen beef sausage samples collected from different localities (Benha city, centers and villages) revealed that, the mean values of APCs, Psychrotrophic bacterial counts , Enterobacteriaceae counts, Coliforms counts and Staphylococci counts in frozen sausage samples collected from Benha city were 3.62×10 4±0. 19 ×104; 2.10×10 4±0. 13 ×104; 1.53×10 2±0. 09 ×102; 0.92×10 2±0. 13 ×102and 1.62×10 2±0.10 ×102 (cfu/g) , respectively; for frozen beef sausage samples collected from different centers were 5.88×104 ±0.17×104; 2.98×104 ±0.11×104; 2.36×102 ±0.11×102; 1. 93×102 ±0.10 ×102 and 2.10×102 ±0.09×102 (cfu/g), successively alongside in frozen beef sausage samples collected from different kaliobia villages were 7.91×104 ±0. 16 ×104 ; 5.32×104 ±0. 22 ×104; 4.84×102 ±0.24×102; 4. 33×102 ±0.22 ×102and 3.23×102 ±0.16 ×102,(cfu/g) consecutively.
Moreover, the statistical results revealed that, frozen beef sausage samples collected from different villages showed a significant (P≤0.05) increase of APC; total Psychrotrophic counts; Enterobacteriaceae counts; Coliforms counts and Staphylococci counts when compared with other samples and a significant (P≤0.05) increase of them in samples collected from different centers when compared with those collected from Benha city.
Regarding to the bacterial species isolation:
For E.coli , the results appeared that, 16 isolates of E.coli were isolated from examined frozen sausage samples collected from different localities (Benha city, centers and villages) represented as 3(8.6%) from samples of Benha city with serotypes one O55:K59(B5) ; one O125:K59(B5) and one O126:K71(B16) ; 5 (14.3%) from samples of centers with serotypes 2 O55:K59(B5) , one O125:K59(B5), one O111:K58(B9) and one O126:K71(B16) and 8 (22.9%) from samples of villages with serotypes 3 O55:K59(B5), 3 O125:K59(B5), one O111:K58(B9) and one O126:K71(B16), also, 89 samples out of 105 ones were accepted as they were free from E.coli isolates. The results of antibiotic sensitivity tests for the isolated E.coli revealed that, they were highly resistant for ampicillin followed by amoxicillin; methicillin; nalidixic acid; oxacillin and streptomycin. Meanwhile, they were highly sensitive to gentamycin followed by enrofloxacin; norfloxacin and ciprofloxacin.
Meanwhile for S.aureus , 22 isolates of Coagulase positive S.aureus were isolated from examined frozen beef sausage samples represented as 5(14.3%) from samples of Benha city ; 7(20.0%) from samples of centers and 10(28.6%) from samples of villages, where 83 samples out of 105 ones were accepted, as they were free from Coagulase Positive S.aureus isolates. In addition, the results of SET- RPLA test revealed that, 7 strains out of 10 random examined strains (70.0%) were enterotoxigenic and classified according to type of toxin into (4A; 1B;2A&C). Moreover, the in- vitro sensitivity tests for the isolated S.aureus revealed that, they were highly resistant for methicillin followed by nalidixic acid and oxacillin; ampicillin; amoxicillin; cefotaxime and streptomycin.Meanwhile, they were highly sensitive to gentamycin; enrofloxacin; norfloxacin and ciprofloxacin.
