Abstract Diabetes mellitus is a group of metabolic diseases characterized by hyperglycemia resulting from defects in insulin secretion, insulin action, or both. The chronic hyperglycemia of diabetes is associated with long-term damage, dysfunction, and failure of different organs, especially the eyes, kidneys, nerves, heart, blood vessels and reproductive system. Chicory is a major crop in northwestern Europe and its roots are a rich source of the dietary fiber inulin, which widely found in nature in a variety of plants and in some bacteria and fungi. Some findings suggest that chicory root, which is rich in inulin, may help counteract metabolic syndrome; a cluster of conditions characterized by hyperglycemia and hyperlipidemia. Phoenix dactylifera, date Palm pollen (DPP) have a great nutritional, economic and health benefits. They are good source of proteins, amino acids, vitamins, dietary fibers, fatty acids, enzymes, hormones and minerals. Many researchers have documented the antioxidant property of date palm pollen.
