Abstract
I am deeply grateful and wish to express my sincere appreciation and gratitude to my supervisor, Prof. Dr. Hosny Abdellatif Abdelrahman, Professor of Meat Hygiene, Faculty of Veterinary Medicine, Suez Canal University, for his valuable supervision, guidance, endless help and support from the initial to the final level enabled me to develop an understanding of the subject. I wish to express cardinal thanks and deep gratitude to Dr. Mohamed Ahmed Elesawy, General Director of El-Arish abattoir, North Sinai province.
