Abstract This investigation was carried out during two successive seasons in 2014 and 2015 on Hayany date palm (as soft cultivar). At the mature (Bisir) stage, the fruit is astringent as a result of high contents of soluble tannins, and removal of tannins is necessary for the fruit to be edible. Fruits were harvested at three degrees of red color (100 % fully red – 90 % red – 80 % red). The selected fruits were washed with tap water; air dried and was immersed for 2 minutes in tap water only, and in chitosan and sodium carbonate solutions either 0.75 or 1.5 % . Fruits stored at 2 ± 0.5° C with relative humidity (RH) 90-95% for 45 days. During the storage period some the physical and chemical characteristics will be determined in fruits sample every 15 days until the end of storage period up to 45 days. The results obtained showed that , chitosan 1.5% and 0 .75 % treatment recorded the lowest fruit discarded percentage, the highest flesh firmness, The minimum moisture loss, the highest value of total Soluble Solids , the highest value of acidity and transformed the bisir to the rutab stage. Sodium carbonate 1.5% gave the highest value of total sugars, reducing sugars and the lowest percentage of fruit weight loss, while sodium carbonate 0.75% treatment gave the highest values of crude fiber and total phenols and the lowest values of pectin and soluble tannins comparing with other treatments in both seasons. The addition of chitosan and sodium carbonate with concentration 0.75% and 1.5% reduce the bacterial and fungal count comparing with control. |
