Abstract One hundred random samples of raw buffalo’s milk were collected from different dairy shops and farmers, In Sharkia Governorate, Egypt. A survey was conducted to evaluate the chemical and microbiological quality of examined raw buffalo’s milk samples by some keeping quality tests, determining milk constituents using milk scan and microbiological examination. It’s evident from the obtained results that titratable acidity of examined raw buffalo milk collected from dairy shops and farmers was ranged from 0.12 - 0.20 with a mean ± SE value of 0.16 ± 0.004 and 0.12 - 0.20 with a mean ± SE value of 0.159 ± 0.004 respectively. By good inspection of discussed result, it cleared that pH of examined raw buffalo milk samples collected from dairy shops and farmers was ranged from 6.3 - 6.8 with a mean value of 6.61 ± 0.037 and 6.4 - 6.9 with a mean value of 6.71 ± 0.035 respectively. It’s evident from the obtained results of chemical examination of raw buffalo milk samples collected from dairy shops that the mean values of Fat%, SNF%, Protein%, Lactose% and Salts% (6.06±0.36), (9.08±0.23), (3.54±0.09), (4.73±0.14) and (0.74±0.02) respectively, while in farmers samples, the mean values were (6.18±0.31), (9.53±0.44), (3.89±0.09), (5.12±0.15) and (0.78±0.03); respectively. |
