Abstract Production of milk is subjected to many risks of contamination due to absence of pasteurization, bad quality and unsanitary methods of processing and distribution. Therefore, production of safe and high quality foods with a minimum of contamination ranks a prime consideration of food hygienists. The results of this work emphasized that raw milk which available for consumption in Sohag City was contaminated by some Aerococcus species including A. viridans, A. urinae and A. sanguinicola. It would appear from the results that A. viridans is an opportunistic pathogen organism that should be included in the list of possible etiological agents causing subclinical mastitis in cows and milk considered as a hazard for human infections with A. viridans through milk consumption. Hence understanding of epidemiology and risk factors is highly essential in order to formulate appropriate management programs. A. viridans is becoming an important cause of bovine mastitis that can adversely affect milk quality and quantity. Thus, this pathogen should not be underestimated as an etiological agent of bovine mastitis and must be given due consideration while designing mastitis control strategies. Further investigations are needed to explore the mechanism of its pathogenesis in bovine mastitis. Today, increasing awareness of Aerococcal spp. as human and animal pathogens, coupled with tools developed for the identification of Aerococcus species has made it possible to identify this genus more effectively. In order to accurately identify Aerococcus spp., API 20 strep system is used instead of biochemical methods. Therefore, the aforementioned data proved that we must pay great attention to the problems of these pathogens in our foods. Consequently, more restriction and preventive measures should be taken to improve the quality of raw milk to protect consumers from being infected by Aerococcus which require many precautions as avoid consumption of raw milk, the public should be made aware of the hazard of Aerococcus and other pathogens in raw milk and should be advised to consume pasteurized milk as Aerococcus will not survive the efficient pasteurization process for milk. |
