Abstract

One hundred samples of raw milk, fermented milk, kareish cheese and ice cream were collected from Zagazig, Sharkia governorate, Egypt. The collected samples were kept in an icebox and transferred directly to the central Laboratory, Faculty of Veterinary Medicine, Zagazig University. The samples examined for detection of heavy metal and antibiotic residues.
1. Copper (Cu):
The copper were detected in 100 % of examined samples with mean values 0.072 ± 0.0081, 0.042 ± 0.0047, 48.5 ± 11.66 and 0.60 ± 0.18 ppm (mg/ litre) in raw milk, fermented milk, kareish cheese and ice cream, respectively.
The examined raw milk and fermented milk samples considered acceptable. In contrast, all examined kareish cheese and ice cream unacceptable according to their content of cupper when compared with the Egyptian standard (2001) which established the maximum permissible limit of milk and its products not exceed (0.1 ppm).
The calculated daily intakes of Cu from consumption of 200 ml milk or 200 gm milk products provided the Egyptian consumer (60 kg body weight) with (0.048%) raw milk, (0.028%) fermented milk, (32.33%) kareish cheese and (0.4%) ice cream from acceptable daily intake.
