Abstract

Summary Illnesses and death from diseases caused by consumption of contaminated food are a constant threat to public health and a significant impediment to socio-economic progress worldwide. Furthermore, resistant pathogen and resistance genes could be transferred from food to consumers, therefore the incidence of antimicrobial resistance in human infections is directly related to the prevalence of resistant bacteria in food products. Probiotic bacteria represent a potential alternative in the prevention and control of foodborne diseases thanks to their proven effectiveness in countering the pathogenicity of foodborne pathogens. So, the aim of the present study was to assess the bacterial contamination of ready-to-eat (RTE) meat products sold in Tanta city, determine in vitro antagonistic effect of a probiotic Lactobacillus plantarum (L. plantarum) against isolates and compare this effect with the inhibitory effect of the commonly used antibiotics. The present study was carried out at the Medical Microbiology and Immunology Department, Faculty of Medicine, Tanta University. It included 90 samples of RTE meat-based food bought during the period of research from March 2018 to February 2019 from different street vendors, roadside cafeterias, restaurants, open markets and supermarkets in Tanta city. The samples were divided into 2 groups: • group 1(37 samples): Good sanitation state (GS). • group 2(53 samples): Poor sanitation state (PS
