Abstract

A total of 120 samples of small scale ice cream were collected from El-Kharga and El-Dakhla cities, New Valley governorate, Egypt (each 60 samples). The samples were collected randomly from all places presented small scales ice cream, including dairy shops, cafes, juice markets and agriculture sales outlets.
The collected samples were subjected to sensory evaluation based on 3 main attributes as visual, texture and flavor, and their resultant in the overall acceptability (OAA). The sensory parameters were scored by a regular score panel based on hedonic scale (from 1 to 9). In addition to the sensory evaluation, all the samples were examined for coliforms, fecal coliforms and E. coli, in order to ascertain the bacteriological quality.
The obtained results indicated that 95 and 96.67% of the examined ice cream samples from El-Kharga and El-Dakhla had the highest OAA score, respectively. Moreover, according to the Egyptian Standards, 90.83% of the examined samples were acceptable for coliforms, as 88.33% for the samples from El-Kharga and 93.33% for those from El-Dakhla; in addition to, all the samples were free from fecal coliforms and E. coli.
