Abstract This study aimed to assess the quality of milk and other dairy products and prevelance of Yersinia spp. especially Y.enterocolitica and identification of Ail virulence gene in the isolates . The study is done on 150 raw milk and dairy products products included 50 bulk tank milk samples, 25 individual farm raw milk, 25 market milk, 25 plain Yoghurt samples and 25 sweet cream samples to determine the titratable acidity and isolation of Y. enterocolitica by using microbiological and biochemical methods. The results obtained showed the measured titratable acidity in individual farm raw milk samples ranged from 0.11 to 0.18 and the mean value was 0.14 ± 0.005.While in bulk tank farm raw milk samples was 0.15 ± 0.13. On the other hand, in market milk it was a range from 0.13 to 0.19 with mean value 0.16 ± 0.005, but in plain yoghurt samples, it ranged from 0.8 to 1.0 with a mean value of 0.9 ± 0.027 and finally the mean value in cream samples was 0.2 ± 0.006. Y. enterocolitica was detected in (38) isolates from 150 raw milk and some dairy product samples after microbiological and biochemical identification with a percentage ( 25.3%) .The previous incidence (38 isolates ) was classified into 32% in farm bulk tank raw milk, 24% in individual farm raw milk, 28 % in supermarket raw milk samples, while in yoghurt it was 20% and in cream samples was 19%.The PCR result confirmed that all five isolates choosed were Yersinia enterocolitica while only three of them were carrying the Ail gene. |
