Abstract The present work aims to study the production of amylase enzyme from microorganisms isolated locally. To produce a promising amount of enzyme using agricultural wastes common in Egypt as substrates under various culture regimens. Amylases have potential application in a wide number of industrial processes such as food, fermentation, pharmaceutical, textile, paper, detergent industries and commercial sectors. This study has shown that the amylolytic enzymes produced by the isolated fungal organism (Penicillium glabrum) may have practical applications in many sectors in which the starch compounds are involved, on account of the pH and thermal stability. |
