Abstract Wild plants are good source of medical compound which spread in most of Egyptian deserts. Therefore, this investigation was carried out to study the chemical composition and possibility of using two of family Asteraceae plants; Pulicaria inuloides and Silybum marianum in minced beef preservation against microorganisms and lipid peroxidation. Chemical composition, sugars, minerals, amino acids, fatty acids, total active constituents, antioxidant, antimicrobial, antitumor activities, effect of ethanolic 70% extract on lipid peroxidation inhibition and microbial count in minced beef for both plants were determined and compared with the chemical inhibition agent. from the obtained results, it was observed that, Pulicaria inuloides had the highest values of carbohydrates, total energy, minerals, total essential amino acids, total non-essential amino acids total tannins, total saponins, antioxidant antimicrobial and antitumor activity. The optimum conditions for preserving minced beef against lipid peroxidation with Pulicaria inuloides ethanolic 70% extract were 0.5% for 3 days in refrigerator and 1% for 30 days in freezer while with Silybum marianum ethanolic 70% extract were 1.5% for 3 days in refrigerator and 1.5% for 30 days in freezer. The optimum conditions for preserving minced beef against microbial growth with Pulicaria inuloides ethanolic 70% extract were 1.5% for 7 days in refrigerator and 0.5% for 90 days in freezer while with Silybum marianum ethanolic 70% extract were 1% for 3 days in refrigerator and 0.5% for 30 days in freezer. |
