Abstract Obesity is a medical condition in which excess body fat has accumulated to an extent that it may have a negative effect on health. Unhealthy eating habits are the main and common cause of obesity. On the other hand, animal meat products such as burgers contain a high percentage of fats, which may cause obesity to those who eat them a lot, resulting in oxidative deterioration, which leads to the occurrence of many chronic diseases, so these products can be supplemented with some medicinal and aromatic plants as a spice or as flavorings, and also as a natural antioxidant to avoid these negative effects. The present study’s main purpose is to highlight the natural antioxidants originating from some medicinal plants that are widely cultivated in Egypt and Tunisia, such as sage and thyme plants, and their effects on obesity caused by a high-fat diet. Sage and thyme were distinguished by their high content of phenols and flavonoids, and the highest concentration of phenolic compounds in sage and thyme were caffeine and salicylic acid, respectively, as well as hesperidin was the highest concentration of flavonoids in both plants. The main component in sage essential oil was camphor, while the major constituent of thyme essential oil was thymol. All these compounds are effective as an antioxidant. Also, burger product was prepared and supplied with these plants and their essential oils at different concentrations and a sensory evaluation was performed to select the best suitable concentration |
